Tahini Lemon Quinoa Salad


This is a fabulous meal on its own or as an accompanying side. I love the amazing flavours that come through with the basil, tahini and lemon, and its versatility with using the veggies and herbs you have on hand.  Quinoa is a complete protein, ensuring this salad packs staying power along with plenty of veggie nutrients.

Tahini Lemon Quinoa Salad


1 c quinoa, cooked and cooled

2-3 tomatoes, chopped

1 pepper, chopped

2 small cucumbers, chopped

A generous handful of fresh herbs (basil, chives, oregano, etc.) chopped


1/2 lemon, squeezed (around 2 1/2 TBSP)

2 TBSP white wine vinegar

2 TBSP tahini (sesame paste)

2 TBSP avocado oil or olive oil

sea salt and pepper to taste

1 clove of garlic, minced

Make It:

Cook 1 cup of quinoa in 2 cups of water or stock. Cool.

While the quinoa is cooking, prepare the veggies and herbs and place them in a salad bowl.

Prepare the dressing. Pour over the veggies and quinoa and toss.
