Summer Squash Frittata
This Summer Squash Frittata is an easy and delicious breakfast, lunch or supper, paired with a salad. A frittata is an Italian dish similar to a crustless quiche or omelette. I used summer squash as the feature vegetable but I also make it with whatever is fresh and on hand such as broccoli, onion, peppers, or potatoes thinly sliced. Feel free to add in some meat or cheese if you so desire.
2-3 small zucchinis or a handful of patty pan squash, sliced
Chives or the tops of a fresh onion, chopped
1/4 c salsa
4-6 eggs, beaten
2 TBSP coconut oil
1) Slice the summer squash and onions.
2) Preheat the oven to 350F. Heat the coconut oil in a cast iron pan and add the vegetables. Sauté the vegetables until tender. Season with sea salt and pepper.
3) While the vegetables are sautéing, beat the eggs in a bowl, then stir in the salsa.
4) Pour the egg and salsa mixture over the vegetables, and let it cook a couple of minutes. Then place the frying pan in the oven and cook for ten minutes.
