Stuffed Hot Peppers
Hot peppers stuffed with a melted cheese and salsa filling, topped with bread crumbs. Yum! These are spicy, so only partake if you enjoy some heat! The Hungarian Hot Wax peppers in this week's delivery are perfect for this recipe. Thanks to Bethany Benoit-Kelly for sharing this recipe.
1/3 c cream cheese
1/3 c salsa
1/3 c grated cheddar cheese
1) Halve and seed a bunch of hot peppers. I recommend using a plastic bag on your hands as the seeds cause stinging and redness if they touch your skin.
2) Preheat the oven to 375F. If you want to tame the heat of the peppers, you can put them in the oven on a tray lined with parchment while the oven preheats.
3) Mix the cheddar, cream cheese and salsa and stuff the pepper halves, topping with breadcrumbs.
4) Bake 15 minutes until the cheese is all hot and gooey and the breadcrumbs are golden brown.
