Scrumptious Beet Greens


Not sure what to do with all those beet tops? This is such a rich and delicious recipe. I think it's the coconut oil, garlic and bouillon that give it the depth of flavour that is so fantastic. The greens reduce a lot so feel free to put in lots. Sean and I both agree these are the best beet greens we have had. We hope you enjoy!


Organic beet tops (greens and stems), chopped
1 small organic onion, minced
2 TBSP coconut oil
2 cloves of organic garlic, minced
1 bouillon cube (I like the GoBio organic ones)
Sea salt & pepper to taste

Make It:

1. Heat the coconut oil in a frying pan. 
2. Sauté the onion and garlic.
3. Add the bouillon cube and all of the beet tops and stems and sauté, stirring frequently. Add a little water if it starts to stick to the pan or get dry. Season with sea salt and pepper to taste and serve hot!
