Cowboy Caviar

Cowboy Caviar as a salad or salsa, is PHENOMENAL.  It's the perfect use for some of your sweet corn, green onions and tomatoes. Every time I make it I want to stop whatever is going on, sit down and devour it myself because the flavours are so fantastic. Thanks to Shelley Corbett-Gutman for allowing us to share this recipe!



1 cup of sweet corn, cooked

1 cup of black-eyed peas or chickpeas

1 bunch of cilantro, chopped

1 bunch of green onions, chopped

1/2 c tomatoes, diced

2 avocados, diced


The Dressing:

1/4 c avocado or olive oil

1/4 c white wine or apple cider vinegar

2 cloves of garlic, crushed

1 tsp cumin powder

1 lime, juiced

Sea salt



Make It:

1)    Combine all of the fresh ingredients in a bowl. 

2)    Add all of the dressing ingredients to a small mason jar, and shake to emulsify.

3)    Pour the dressing over the veggies and toss lightly.  


Enjoy as a salad or a salsa with chips!
